Healthy pickled beets recipe

Ingredients:
– 8 medium-sized fresh beets
– 1 cup of vinegar
– 1/2 cup of sugar
– 1-1/2 teaspoons of whole cloves
– 1-1/2 teaspoons of whole allspice
– 1/2 teaspoon of salt

Directions:

1. Begin by thoroughly scrubbing the beets and trimming the tops to about 1 inch. Place them in a Dutch oven and add enough water to cover them completely.

2. Bring the water to a boil, then reduce the heat to a simmer. Cover the Dutch oven and allow the beets to cook for approximately 25-30 minutes, or until they become tender.

3. Once the beets are tender, remove them from the water and allow them to cool. Once cooled, peel the beets and slice them. Place the sliced beets in a bowl and set them aside.

4. In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring the mixture to a boil and let it boil for 5 minutes.

5. Pour the boiled mixture over the sliced beets. Cover the bowl and refrigerate it for at least 1 hour to allow the flavors to meld.

6. Before serving, drain the beets from the liquid.
